Basic Aloo Bhaji

Really simple, makes about three hefty servings
  • Five (optional: peeled) and thinly sliced potatoes
  • Three thinly sliced onions
  • Salt to taste
  • About 1 tsp or 1/2 tbsp turmeric
  • Six chopped kachamorich (can sub with jalapeƱo)
  • Mustard oil to cover half the big pan
Fry the onion in the oil until it is browning in medium-high heat.  Add the turmeric and salt.  Mix it in.  Then, add the kachamorich and mix that in.  Add in the potatoes.  Stir it all in.  Stir for a few minutes.  Then cover at low-medium heat.  Stir the potatoes every five or so minutes.  No need to add water as the potatoes release their own water during cooking.  Will take about four covers and stirs.  It'll be ready when the potatoes are soft.  Add salt throughout to get the flavor just right.
