Dim Korma (for polau)

Recipe for 8 eggs, reduce recipe in half for 4 eggs.

1. Place 4 coffee cups of milk on low heat (for ~1 hour) and then set aside when reduced.
[This will reduce to about 2 cups]
2. Place 8 eggs to boil and then peel.
3. Scorch the eggs with a fork/knife.
4. Place 1 tsp of ghee onto a nonstick fry pan and fry the eggs for 2-3 mins and set aside.
5. Cut 2 onions (diced)
6. Add about 1 ladle spoon of oil to pot.
7. Add the onions and fry for a bit until translucent
8. Add 1 tsp of ginger minced, 1/2 tsp of garlic minced, and 1/2 - 1tsp of coriander (dhoina) powder
9. Mix masala well, add a little bit of water if needed to prevent it from burning.
10. Add 1 cinnamon stick, 1 tes paata, 1/2 tsp salt, 1-2 drops of kewra water, 4 pcs elaichi, 3 pcs clove (laung), and mix all these masala well.
11. Once all is mixed, slowly place the eggs to the pot and mix eggs with masala.
12. Add the milk.
13. Add 3 whole kaacha morich.
14. Add 2 tsp of sugar.
15. Taste for salt and sugar and adjust accordingly.
