Spicy Tomato Linguine

This is a great base (& basic) dish that you can cook up real quick.  Feel free to customize however you want.  Some ideas are: grilled chicken, shrimp, mushrooms, bell peppers, chicken nuggets, etc.  I fried some eggs over medium and ate them with this pasta.

Boil linguine noodles in well salted water to al dente.
Set aside.
Blend one medium onion with one tomato.  No additional water is needed because the tomato releases its own.
Add one tbsp of butter of the pot, on medium heat.  When it melts, add the onion-tomato paste.  Add 2-3 tsp of garlic paste and mix together.
As the onion mixture cooks, blend together three tomatoes, a handful of whole black peppercorns, 1 tbsp of dried oregano, 1 tbsp of dried basil, 1 cardamom, and a quarter cup of dried red chili flakes.  Again, no additional water is needed as the tomato will release a lot of water.
Add this tomato mixture to the sauce, along with 2 tbsp of ketchup (optional).
Add 1/2 tbsp dried oregano, 1/2 tbsp dried basil, 1-1.5 tsp of salt, and 2 tbsp chili flakes to the mixture.  Mix together well.
Gradually add 1/2 cup half & half to the pasta sauce and mix well.
Mix in the linguine with the sauce.  After well mixed, put heat to low as you sprinkle in 2 handfuls (about a 1/2 cup) of freshly grated parmesan.

You could probably use fresh oregano and basil instead.  I don't have any so I'm not sure what the equivalent would be.  I would also recommend thyme, but I did not have this herb either.

This is a really basic dish that hits the spot if you're craving creamy, cheesy, spicy carbs.  Flavor would be improved with more butter, half & half (or heavy cream as a substitute), and more cheese.  Unfortunately, this also increases the calorie count, so it all depends on you and what you're craving.  I found this version really tasty & filling.  Makes approximately 8 servings.
