Aloo Bhorta
Boil five potatoes, peeled and with holes poked in. You can also leave the skin on for a different taste.
Tip: If you don't have a peeler or don't want to peel, poke holes into the potato with a knife or fork. Place into a bowl filled with water. Microwave for six minutes. It'll be easy to peel the potatoes now. You can peel first and microwave too.
Fry on low heat in ghee:
3 garlic cloves
2 green chilis, chopped finely (can sub with jalapeño)
small onion, diced well
crushed red pepper
Fry until the garlic smell subsides and the onions brown.
Add to the potato. Chop a handful of coriander finely. Mash it all together by hand.
Add salt and mustard oil to taste as you mash.
